Isn't the 17% +hit for +3 level mobs just for spells? Or did they move all characters to require +17% (instead of the old +9%)

I don't think +hit or expertise is an important stat for a tank.
Tank must be able to survive an attack, and I understand that removing boss' parry chance helps that, but that can be done by using a 2-hand weapon.
If you are worried about boss' parry than you gotta use 2hander. If you're not worried about it, than go for whatever you want.
But whatever you do, I just can't see tanks worrying about +hit and +expertise, you gotta go def (to eliminate crit) > stam > str/parry/dodge > hit
I'm not clear on str/parry/dodge (which one is in what order), but hit cannot be important stat for a tank. That's a gimped tank from my point of view.
Given above, I don't think DK's pushing content can possibly dual wield.

I personally try to not theorycraft because I spend a ton of time second-guessing myself: "Am I SURE Paladins have a 1:2 STR:AP?" That kind of thing. Your information has told me precisely one thing: too much hit rating is required to effectively DW tank that I will just use a 2h'er to tank with a Deathknight. Like I planned to originally, but hey, options!
As for being DPS... *murders the rogue and takes his combat swords away*

Blacksmithing:
Socket Belt
Socket Glove
Socket Bracer
Net Sockets added = 3
Change the profession section to note that Blacksmithing only gives 2 sockets, since the belt socket is BoE.
Also, not sure if you want to mention that your strikes get capped at the standard 2h level.
